What is the best gift for Mother's Day?
Certainly as we are finally moving along from restrictions, I would say a big hug. Connection with loved ones. A chance to share a meal, good conversation and limitless time at the table. We all have our favourite meals, sure! But I just want time with my family. My vote is to keep Moms out of the kitchen.
How to start the perfect day? In the Todaysmenu world, it would be with spinach & cheese quiche , fresh fruit and hot cup of coffee.
Lunch would be Roasted Red Pepper & Sweet Potato Soup
Dinner menu has a few options.
Honey Mustard Salmon with 7 Vegetable Lentil Curry & Roasted Sweet Potatoes
Keep it Simple Dinner.
Classic Beef Lasagna & Mixed Green Salad
This really keeps Mom out of the kitchen. Pop in the lasagna to the oven. Have a fresh green salad ready to go in the fridge. Option to add some toasted or fresh bread. Voila.
You know Mom best. She might be all in a chocolate gal and the decision is easy. But choice is nice and you can easily do all. Make the cookies earlier in the day and use the oven for the apple crumble as you take out the lasagna. The brownies just need to sit out until being served.
Set up a self serve dessert bar. A little bit of everything. Set up a little plates with forks and three dessert stations. Help yourself!
Oatmeal Chocolate Chip Cookies
