Thai Carrot Soup ( Serves 2)
From our very own Chef Natalie. This soup has a smooth, silky texture and is mildly spiced for maximum flavour. Made using fresh ginger, lemongrass and coconut milk.
Ingredients: Ontario carrots, coconut milk, onion, fresh ginger, garlic, lime juice, lemongrass, olive/canola oil, coriander, sea salt & pepper.
Reheats on the stovetop or in the microwave.
Chef's Tip - serve with Cheddar Cheese Corn Bread
